Ingredients

TO MAKE HUSHPUPPIES:

1. Cornmeal - 1 cup
2. All-purpose flour - ⅓ cup
3. Sugar - 2 tablespoons
4. Baking powder - 1 teaspoon
5. Baking soda - ¼ teaspoon
6. Salt - ½ teaspoon
7. Egg - 1
8. Buttermilk - ½ cup (you may not use all of the buttermilk)
9. Oil - for frying

TO MAKE DIPPING SAUCE:

1. Egg yolks - 2 large (yolks should be at room temperature)
2. Yellow mustard or spicy brown mustard - ½ teaspoon
3. Lemon juice - 1 teaspoon (or add more according to your taste)
4. Olive oil - ½ cup
5. Unsalted butter - 3 tablespoons
6. Ketchup - 3 tablespoons
7. Onion, minced - 3 tablespoons
8. Cayenne pepper - add according to your taste
9. Salt - add according to taste

Directions

1. At first, preheat the oil.

2. Now, take a medium-size bowl and combine all the dry ingredients.

3. Next, beat an egg in a separate bowl and pour it into the dry ingredients bowl. Also, pour in buttermilk according to your need and create a moist dough. Make sure it is not runny.

4. After creating a moist dough, drop a teaspoon of this mixture in hot oil.

5. For three to five minutes, cook the hushpuppies until it is golden brown.

6. Once they are browned, transfer them on a plate lined with a paper towel to drain excess oil.

RECIPE NOTES:

1. You can add chopped jalapenos and green onions into the batter as well.

2. You can also add more salt according to your taste.

3. If cornmeal is not available, you can substitute it with ground oats, rice flour, or wheat flour.

4. Instead of buying buttermilk, you can easily make homemade buttermilk.

DIRECTIONS TO PREPARE DIPPING SAUCE:

1. In a food processing bowl, place the egg yolks and blitz them for a minute or until the yolks have begun to thicken.

2. Upon thickening of the yolks, add mustard and lemon juice and continue to process it for 30 seconds.

3. Now, drizzle in the oil and mix. After drizzling in all the oil, next drizzle in the butter and combine.

4. At this stage, the dipping sauce should be thick.

5. Next, stir in ketchup, ½ teaspoon salt, cayenne, and onion.

6. Taste the sauce and add additional constituents as per your taste.

7. Serve this dipping sauce with hot hushpuppies.

ANOTHER SAUCE RECIPE: CREAMY HONEY ORANGE DIPPING SAUCE:

1. Take a small-size bowl and mix one cup of yogurt, two to three tablespoons of orange juice, and one to two tablespoons of honey.

2. Combine all of these constituents until smooth.
