Directions

1. The first and foremost step to bake the fries is to preheat the oven at 218 degrees celsius. Be sure that the rack should be six inches away from the heat source and no closer than that. Take two large baking sheets and then line it with parchment paper. Parchment paper is necessary so that the fries don’t get stuck to the baking sheet.

2. Now, peel the sweet potatoes and then cut them into lengthwise. The fry-shaped pieces should be ¼ - inch wide and thick. Distribute sweet potato fries evenly on to the two baking sheets.

3. Dust the sweet potato fries with cornstarch (use 1 ½ teaspoon per baking sheet) and salt (use ¼ teaspoon per pan). Toss the fries until they are lightly coated. Trickle olive oil or any other vegetable oil (use one tablespoon per sheet) over the fries and toss them again until they are lightly and evenly coated.

4. Arrange your fries in such a way that they are not overcrowded. Arranging them in a single layer is the best; in this way, the fries will get crispy. For 20 minutes, bake the fries and then turn the sweet potato fries so that they get cooked from all sides.

5. Return the baking sheets into the oven and bake further for 10 to 18 minutes. The fries will become crispy, and their color will change from shiny orange to matte orange. Don’t fret if the edges become a bit brown; they will have a more caramelized taste than burnt.
